WONTON MAMA is a retro Hong Kong street food pop-up imagined through a Chinese Canadian lens, created in collaboration between Fairmont Vancouver Airport and MAMAintheKitchen. Running three days a week for a limited time, WONTON MAMA brings together the nostalgia and cultural richness of Hong Kong’s vibrant street food culture with the fresh, locally rooted spirit of the BC coast.
At its heart is the vision of Chef Sharon Chan, the creative force behind MAMAintheKitchen, who believes that flavour is memory. Inspired by the traditions of home kitchens and Hong Kong noodle shops, every bowl is built layer by layer, from slow-simmered broth and hand-folded wontons to fresh noodles and thoughtfully balanced seasonings.
Located inside Fairmont Vancouver Airport, WONTON MAMA sits at a crossroads of cultures, where travellers from around the world pass through every day. From handmade wontons and fresh noodles to playful dim sum bites, house Chinese BBQ, and cocktails inspired by Vancouver’s historic Chinatown, every detail is crafted with intention, warmth, and a sense of joy.
